Part restaurant empire-builder, part celebrity, and part sublimely talented chef, Gordon Ramsay is a truly global star in the cooking world.

It all could have been so different. As a teenager he was on the books of Glasgow Rangers FC, but injury put paid to his chances of a professional career. So, imbued with an ambition never to fail again, he switched his attention to cooking. After catering college this ambition took him to two of London's legendary restaurants - Marco Pierre White's Harvey's and Albert Roux's Le Gavroche - and then on to France to work under Joël Robuchon and Guy Savoy.

A stint as the personal chef of an Australian TV chief was the prelude to his first big break, taking over as part-owner of Aubergine in London. Within three years he had been awarded two Michelin stars. It wasn't to last. After a bust-up with the restaurant's backers, Gordon left and took all his staff with him to his new venture in Chelsea, Gordon Ramsay. It became a huge critical success, earning three Michelin stars. He now has restaurants in the Connaught, Claridge's, at the Berkeley hotel in Knightsbridge (Boxwood Café) and in Dubai (Verre), and has his eyes on many more sites.

All this might not have made him the celebrity he is, however, had it not been for his legendary temper which has made him a favourite with TV programme makers. Most recently, he has been the star of two much-talked-about series, Ramsay's Kitchen Nightmares and Hell's Kitchen. Gordon is also a contributor to the BBC Good Food magazine and Olive magazine.

Ed Baines is the chef and co-owner of Randall & Aubin, the happening champagne and oyster bar in Soho. The tall, dark and handsome restaurateur is one of the hottest chefs in town.

To reflect his style, his first TV series Lunch With Ed Baines, which aired on Carlton Food Network, had him cooking for and then lunching with his famous friends, at Randall & Aubin. Unsurprisingly, on the show he cooked for a string of glamorous women, including Darcey Bussell, Tara Palmer-Tomkinson, Mariella Frostup and Meg Matthews.

In 1999 he completed the six part series Ed Baines Entertains, filmed at Randall & Aubin, broadcast on the ITV Carlton region. He recorded 2 further series, which were broadcast during 2000 and 2001. He also appeared as one of the chefs for the BBC daytime lifestyle show Housecall.

Ed Baines fell into catering. After a two-year apprenticeship with Anton Mosimann at The Dorchester he spent a few years cooking on one of the world’s exclusive yachts and at hotels in Juan-les-Pins and Queensland, then back home at Bibendum and the River Café. At this point he was ‘headhunted’. He became the official Armani chef. He entered a happy time of dressing entirely in Armani and ‘having a few girlfriends who knew I could get them a discount.’ He also dabbled in modelling. At 25 years of age Ed was contracted by Mogens Tholstrup to open the very successful Daphne’s in South Kensington, where he remained as Head Chef for three years. He began to yearn for his own restaurant, and in 1996 as Chef Patron, and with his friend James Poulton, he opened the hugely successful Randall & Aubin; following this with the Ifield in Chelsea. He has also opened another restaurant bearing the Randall and Aubin name in Fulham Road. In November 2002 Ed and James opened the fourth in the chain, The Belsize, a brand new pub/dining room on the site of the old Belsize Tavern.

Ed filmed Cupid's Dinners for broadcast on UK Food and is one of the resident chefs on Good Food Live . He has regularly appeared on programmes for Granada Livetime, Central Television and Carlton Food Network and has featured on Superchefs . In December 2002 he was seen every weekday on Channel 5 from December 2nd - 20th presenting Countdown To Christmas. Most recently he had his own series, Chefs at Sea – also for UK Food and appeared on the Terry & Gabi (C5) show. Ed has worked on long term projects with Portmerion and Cole & Mason.

His first book Entertain was published by Kyle Cathie in 2001 and he has been profiled by a raft of newspapers and magazines, including The Sunday Times, Evening Standard and Time Out . In October 2004 Ed travelled to China to demonstrate British cookery as part of a project with BBC

Lee Roy James Lee Roy James  

If you could use the term "Serving your time" in show business it would aptly apply to Lee Roy James. At the age of 13, he was playing in a group in his native Southern Ireland. At the age of 20, he turned professional with what was a phenomenon of the 60's & 70's - The Irish show bands. After a few years, the desire to be a solo performer dominated him and he made the decision to come to Britain. Within a short time he was an established singer of note. He was always in demand supporting many top names in the clubs. After a few summer seasons on mainland England Lee Roy went to the Isle of Man to do a summer season and ended up doing 9 continuous seasons! At his peak, he was performing an amazing 27 shows a week. It was here that he found his natural laid back humour could easily make the audience laugh, and with that in mind, following a detour home from Germany, he landed on the Costa Del Sol, where he came into his own.

Lee Roy James has got an abundance of talent and material. He regularly makes the top ten in the Irish independent charts, and indeed writes most of his own music. As a performer, he is capable of over 2 hours of entertainment, mixing clean Irish humour and anecdotes, with easy listening music, and even taking requests from the audience to play on guitar. Spending several years on the Costa Del Sol, Lee Roy became the reason why so many holidaymakers returned, year after year. His trademark slogan, “the natter and the patter” was born in Spain. The consummate professional, Lee Roy James is an artiste you can rely on. As he once said, “it’s my job to try to please the audience, and I give them 100% - the most important people are the audience.”

A very easy going gentleman, one promoter was known to say that he is so laid back, he should be propped up! It takes a lot of professionalism to earn an accolade like that. Lee Roy James has also performed in the Channel Islands and in the United States (Florida & Nashville) and was equally successful in making the people of America fall prey to his humour and that is not an easy thing do. In 2003, once again, he was asked to entertain at an annual Irish festival in New York.

More recently, he has worked on the Airtours circuit, regularly flying out to Spain, and is a cruise ship regular – ideally suited to his style. You can book Lee Roy James as an after dinner raconteur, as a stand up comedian, or in cabaret, where he can utilise his amazing vocal talents

This talented artist has annual sell-out performances at the Glasgow Royal Concert and attracts huge audiences for his ‘Big Night Out’ spectaculars at the city’s King’s Theatre. He doubled the audiences for his weekend morning shows on Clyde 2.

Dean’s three decades in showbusiness have seen him performing in venues throughout the United Kingdom, but he is equally at home as a stand up comedian or as a very accomplished after dinner speaker
